I love making my own limoncello. The addition of lavender in this version imparts a slight floral aroma that does not overpower the lemon. This will be good for a party, but be sure to plan ahead, as it takes weeks to prepare. YIELD: 10–12 DRINKS 6 organic lemons 6 organic limes 3 sprigs lavender 2 liters light rum or vodka 6 cups sugar 3 cups water With a vegetable peeler, peel the lemons and limes, making sure to avoid the bitter white pith. Discard citrus pulp or save it for another use. Put the lemon and lime peels, lavender, and rum or vodka in a container, seal it, and let it stand for 4 weeks. Strain the mixture into a container. Mix the sugar and water in a medium saucepan and bring to a boil. Reduce the heat and simmer until the sugar has dissolved. Let cool before adding to the rum mixture.
